Past a five-foot stack of lumber and photographs framing fez-toting, babushka-wrapped immigrant families lies Portland’s first foray into Sephardic cooking. Owner Scott Snyder fuses Jewish flavors and traditions from Spain, Portugal, North Africa, and the Middle East, all in sync with the seasons. From the menu of small bites, starters, and entrées, you might find grilled sardines over a Tunisian potato salad, or a pistachio-milk custard dancing with salted nut brittle and “candy floss.” A crackling, open hearth adds firepower to everything from fresh carrots to whole legs of lamb. The daring cocktail list takes inspiration from the house playlist with the likes of saffron creams and coriander bitters, and the wine list stretches all the way to Israel and Lebanon. Levant is charting an intriguing spice route, hearth to tumbler.
