After months of anticipation, Jackknife welcomes thirsty visitors to its historic downtown location in the newly-relaunched Sentinel's hotel lobby. The main focal point of the bar, which officially opened its doors on April 18, is a smooth, white curved marble bartop that spans 65-feet and seats up to 50 people. Patrons can cozy up on a barstool or tuck into a private corner in a back of the bar, which was repurposed from an old office space.

While beer and wine are gladly offered at Jackknife, the main liquid attraction is an extensive cocktail list, which includes both "Classic Hotel Cocktails," historic drinks made famous in various hotels across the country, as well as special "House Cocktails," creations invented by the bar staff.

Speculation surrounded whether Jackknife's owners, John Janulis and Jake Carey, who offer extensive veg-friendly food options in their wildly popular Bye & Bye, Sweet Hereafter, and Dig a Pony, would include non-vegan options in this newest venture. Well, the answer is in—Jackknife offers a wide array of food options on their bar menu, including deviled eggs, pimento cheese, and a charcuterie board. But in the spirit of supporting animal-friendly lifestyles, the owners have also included several vegan food options as well, such as potato ginger fritters, the roasted cauliflower soup, and the caponata (a smoked eggplant and pepper sandwich).

Jackknife is already buzzing with excited patrons—and we got our own buzz on at the historic hotel bar earlier this week. Check out our slide show to see some of Jackknife's cocktails and food items by clicking through to the photo above.
