Proving that you don’t need a white tablecloth to dine like a pro, Clark stocked up on chicken liver bourbon mousse from Chop Butchery, a half dozen Shigoku oysters, a loaf of Little T’s pretzel bread, hummus made in house (plus some endive for dipping), a handful of Castelvetrano olives, and Willamette Valley Cheese Company’s Boerenkaas gouda. The meat-centric chef loaded up on ready-made carnitas and barbacoa, just-out-of-the-fryer chicharones and chips, fiery chorizo and salsa roja, creamy guacamole and cojita encilado, and fresh tortillas for DIY tacos alfresco at this lively mercado and taqueria. The co-chef of Northeast Portland’s chic and feminine French café kept to her culinary roots with a traditional Saucisson d’Arles from Olympic Provisions, a fresh baguette from Pearl Bakery, Freddy Guys’ salted hazelnuts, fragrant strawberries from Groundwork Organics, Baird Family peaches, and Adelle soft ripened cheese from Ancient Heritage.
